The must obtained from the pressing of the Chardonnay grapes, in March of the following year after the harvest, is completely matured and it is bottled. The wine is sugared and added of yeasts and it achieves the re-fermentation in the bottle. At the end of this process which produces the characteristic perlage, we assist at the maturation on the yeasts which lasts about 20/24 months.

During this period of permanence in the bottle, the wine loses its herbaceous distinctive features and it assumes a character which makes of it a very delicate and fine sparkling wine. After this period of time, the procedures of "remuage" and" degorgement" prepare the wine to be drunk. The final product is ready to be consumed after two years from the time the grape was harvested.

Fine and intense perlage, persistent and lively foam, a characteristic straw-colored yellow nuance with clear greenish glints. The perfume is complex with evident aromas of fruit, aromatic herbs and honey which exalt the Chardonnay true nature. The taste is long, harmonious and fascinating.

Excellent as aperitif, it matches with raw fish, crustaceans, soups and fresh cheeses.
