Parmigiano-Reggiano cheese from the “Red Cows” is produced exclusively with the milk of Red Cows Reggiano, an ancient breed from the region of Reggio Emilia that arrived with the barbarian invasions. In Italy there are only 1,000 animals of this breed milking, with an average production of only 5 tons of milk per year, milk that is very rich in proteins. Research at Italian universities shows that this milk is the best available for making Parmigiano-Reggiano, using a careful mix of milk from the evening and morning milkings. Vacche Rosse must be aged over 2 years in the area of production established by the Parmigiano-Reggiano D.O.P.The Red Cows are fed only with local hay, fresh herbs and cereals. Vacche Rosse cheese lives as testimony to the culture and technique of the Red Cow farmers and cheese masters who for 8 centuries have learned from their fathers the art of producing this very special cheese.
